Shane has over 18 years experience working in kitchens. He has spent some of his career working as a private chef on a yacht in the South of France and as a Private Chef for JP McManus and his family.
Shane has trained in some of the most prestigious kitchens in the world having spent many years working in Michelin starred kitchens including the renowned three Michelin starred restaurant Gordon Ramsey on Royal Hospital Road London and the three Michelin starred restaurant Alain Ducasse at the Dorchester on Park Lane London.
On returning home to Ireland, Shane took on the position of Executive Sous Chef at Ashford Castle Estate. Following this, he worked in the One Michelin starred Loam restaurant in Galway City.
